Well, I made my second new recipe this week tonight. Yes, it was a casserole, and yes, it involved ground beef (two pounds down, six to go). And, as opposed to the deeply unsatisfying meal on Tuesday, this one was delicious. S helped me quite a bit tonight, and he was skeptical at first, because part of the recipe involves cooking noodles, draining them, and then dumping a can of condensed cream of chicken soup over them. The chicken soup really weirded S out; I could see the doubt in his eyes. Apparently, he didn't think chicken-y noodles and tomato-ey beef would go together, but really, the chicken soup just made the casserole creamier.
I have to admit that I did doctor the original recipe a lot, because it seemed so bland in its original form: ground beef, brown sugar, and tomato soup. I decided that I would add some of the ingredients from S's beloved sloppy joes, thinking it couldn't possibly hurt the mixture; if anything it'd be like "Sloppy Joe Casserole". And now considering, I guess that's what it was. (I added white wine vinegar, worchestershire, and garlic powder.) The only other thing the recipe calls for is American cheese, and I kept that the same. American cheese melts beautifully, with a sort of creamy texture, which made it perfect for this casserole.
S had two helpings, which definitely makes it success, and we even kept the leftovers, just in case we feel like eating them tomorrow night. (Tomorrow's lunch will be consumed at the auto show.) And to put things in perspective, I maybe should tell you that we simply DON'T eat leftovers, ever. We may keep them, but neither one of us care to eat them. I'm not 100% sure why. (Exceptions being leftover ordered-in pizza, and last night's french fries, which S ate for lunch today.) So if we actually eat the leftovers from this meal, it'll be a miracle.
